The best raw “V” salad you will ever eat & a little “MoJo”!

Well hello there! Did y’all have a good healthy dinner? I thought I would share with you my favorite salad I made tonight! It’s in my new book Sexy on salads ~ I call it The “Everything but the kitchen sink” salad! You get my point! 🙂

“EVERYTHING BUT THE SINK SALAD”
By Andrea Leigh Cox
Serves one hungry girl who loathes using measuring cups!
 
2 handfulls of spinach
1 handful of baby kale
1 handful of watercress
1 handful of arugula
1 handful of baby “maters”
1handful wasabi peas (freeze dried)
splash of apple cidar vinegar
1/2 an avocado (just mash that baby in)!
1 fist full of hemp seeds
Topp this with alfalfa and mung bean sprouts!
 
Dressing
1 red bell pepper stem removed
4-5 heaping TB Nutritional yeast
2 heaping TB NON GMO Lecithin (so good)
 
Place all the ingredients intoi a huge mixing bowl
Blend the salad ingredients
Pour over the salad
Grab a wooden fork and devour without shame or guilt! You’re feeding your body LIVE food! ❤ ❤ ❤

A little “MOJO” and some sweet advice from your truly! 🙂
Some of the kindest acts I’ve ever have taken place in grocery store checkout lines!
Last Friday I was trying to rush around and cram all of my errands for an entire week into just a few hours! I spend my weekends out of town and usually that means Mexico, LA and occasionally Vegas. This past weekend it was Mexico to relax at the “man-pan-ions” house.

In traditional “Andrea style” I put everything off until the final hours and was running all over the place. I looked at my cell and realized I hadn’t eaten and 5pm was approaching! I stopped at a local Vons supermarket where I grabbed some pretty smelling flowers and two containers of salad greens. As I was checking out I realized that I had either left my wallet in the car or at my last location. As I fumbled in my purse the gentleman behind me said “I’ve got it, just pay it forward”. I insisted that my wallet was in my car and it wouldn’t be necessary. He said “what a waste of energy, this is twenty bucks & I’ve got it”!

I can’t tell you how many times I’ve been in a supermarket checkout line and paid for someone’s items that didn’t have the money. Each time I left I felt good about myself and didn’t think a second thought about it. Usually I would say “we all have rough days”. From now on I’ll always say “please pay it forward”!

When I got back in my car my wallet was on the floorboard. As I looked around the parking lot he was nowhere to be found.

Allow no act of kindness to go unnoticed! There’s too much cruelty in this world to let good deeds go without praise!

7 reasons I prefer to make my own food!

1) I prefer to know the source of my produce!
The fact is that the vast majority of restaurants do not sourse genetically modified foods and yes, organic foods! Since I am vegan I won’t even touch on where a huge portion of the restaurant meat is coming from!

2) Its expression of creativity!
I consider my food to be “edible art”! I absolutely LOVE creating beautiful living food to nurture my body with!

3) Its faster!
This meal took me 3 minutes to assemble! Did I mention I followed it with vegan homemade cookies that I whipped up this morning? 

4) Preparing my own food allows me to tune into my body more!
When I prepare my own food I can really tune into what my bodies needs and desires are instead of being limited to a menu!

5) All my friends eat sunshine too:)
The fact of the matter is that the vast majority of my girlfriends also prepare their own food 90% of the time! We call ourselves “sunshine warriors”! We know that food is mood and that in order to FEEL good we must eat good too!

6) It saves money!
If I spend $150 at the farmers market or grocery store I know that my food will last the entire week! Thats way more bang for your buck than dining out on a consistent basis!

7) I get joy out of creating living creates for friends and family!
It’s true…nothing makes me happier than creating a meal that I know without a doubt will nourish my loved ones from the inside out!

BONUS ~ I KNOW HOW THE FOOD IS PREPARED!

Lets face it troop! We cannot be too careful these days! Have you ever looked at the amount of salt that is in a restaurant meal? Are you lactose intolerant? I guarantee you the foods you are eating not only contain gluten AKA GLUE, but also have traces of dairy and are cooked in fats that should NEVER be heated! Educate yourselves and get to town in that big beautiful kitchen you just remodeled! Or your college dormitory:) Both will work!

Why I LOVE making a meal out of a salad!

I absolutely love to make big salads for dinner! The salad that I make most frequently is a sweet yet hearty date walnut salad with my sweet and sour dressing! It’s one of my comfort foods. Kinda like eating a bowl full of candy on Halloween!

I also make lots of other different varieties, including kale and my famous tahini salad! Adding kelp noodles is a great way to add more substance to a salad. The Salads like the ones I have in the slide show below are hearty enough to make your whole family happy, but if you’re worried they won’t be quite enough, you can easily supplement with fresh raw vegan gluten free bread topped with avocado…yumm! Below are my top three all time favorite salads to make! I casually list the ingredients! Use your imagination and supplement with what you prefer! I LOVE when my body is flowing in perfect harmony with the live food I give it! 

Wild edible salad of arugula, mustard greens and nettles topped with sprouted walnuts, dates and shredded coconut! I used my sweet and sour dressing with a touch of lecithin to mesh the flavors! Vegan food porn at its finest!

Kale salad!

This kale salad is so hearty and filling! I use an entire head of kale! Simply by mashing an entire avocado, a few dates for sweetness, lemon juice and high quality keltic salt….you have a meal fit for a raw vegan King! Or Queen!

Why I eat salads every day! “Bullet proof vest”

Hi there folks! I woke up this morning feeling SO incredible and decided to share my thoughts about something that was taught to me years ago! This may seem like simple health 101 to you but eating your greens is SO important! Let me explain why!

Persimmon Salad

Andrea’s Persimmon Salad!

Serves 2

30 minutes or fewer

Pick up persimmons while doing your fall produce shopping at the local farmers market and you won’t regret it. They taste like Christmas! Sweet yet spicy, and with a gorgeous color.

Hachiya and Fuyu are the two types of persimmons you’re most likely to find. When ripe, heart-shaped Hachiya are jelly-like, while the squatter Fuyu stay firm. Save the wispy fronds from the chopped fennel bulb to garnish the salad!  

  • 2 tsp. Dijon mustard
  • 3 cups mesclun greens
  • 4 ripe persimmon, halved and cut into fans
  • ¼ cup chopped fresh fennel bulb
  • 2 Tbs. dried dates, coarsely chopped
  • 2 Tbs. chopped raw walnuts

1. Wisk together dates and mustard in small bowl. Season with salt and pepper, if desired.

2. Arrange mesclun greens on 2 salad plates, and divide persimmon fans, fennel, cranberries, and toasted walnuts between them. Drizzle dressing over salads and indulge without guilt or shame!
