Quick Raw Vegan Recipe to Raise Your Vibration – Magic Truffles!

Hey Luv, look what I made for you! 

In order to have a high vibrational life you must feed your body high vibrational foods but also be mindful that stress within the wallet will create an oxidational stress on your body. 

I’m an independent woman who has a monthly overhead of close to $9000 before I even step out of my home. 

This $9000 includes 

$3200 in a monthly note for my home

$250 towards infusion soft

$150 towards WP Engine

$125 to T-Mobile

$170 to SDG&E 

The list is ongoing and never ending and this is before food costs.

There’s no husband paying the bills

There’s no boyfriend helping out

There’s no roommate

No senior discounts 🙂 

And I live in one of the most expensive ZIP Codes in the country. 

Recently I noticed that I was spending $50 – $65 a week at a local juice bar that I LOVE! One of the things I was spending money on were raw vegan truffles similar to these. I had to stop and ask myself at the end of the month why I was spending this type of money on Raw Vegan truffles when I was a Raw Vegan chef for years? 

Last week I took a screenshot of the ingredients, came home tweaked the recipe and have re-created them myself. Now I am saving roughly $50 bucks a week! I even like my truffles better! 

Be wise with your money. I cut coupons before I go to the grocery store just like my mother did. I cut coupons no matter how much I have in the bank. Always have money set aside. Because at the end of the day you never quite know how things will work out. Take it from someone who had to rebuild her self from the ground up more than once, you’ll want to be prepared for that time and not have to rely on someone else’s money to get you through.

RAW VEGAN TRUFFLE BASE 

  • 1 2/3 cups + 1 teaspoon gluten free coconut, chickpea or oat flour (I chose chickpea)
  • 3 tablespoons Grade B maple syrup
  • 3 tablespoons melted coconut oil
  • 1 inch of real vanilla bean
  • ¼ cup + 2 tablespoons vegan chocolate chips 

Place dry ingredients in a food processor and blend. Add the coconut oil and grade B maple syrup while the processor is still running. When this is blended, pulse in the chocolate chips. 

I used three toppings to roll my raw vegan truffles in.

Topping #1 Melt Sacred chocolate (or any raw vegan chocolate) on a double broiler and roll the balls in the chocolate. Allow them to harden in the fridge or freezer.

Topping #2 Healthy powdered sugar Simply blend equal parts of arrow root powder with coconut sugar and roll the balls in this mixture. 

Topping number #3 GO NAKED!  (My personal favorite is no topping at all)! The balls look just like raw vegan cookie dough without a topping!

Gluten Free Vegan Key Lime Pie, For Christmas?

Why is it UBER cool to serve key lime pie at Christmas? Because it’s GREEN like your tree & although I LOVE persimmons {I have a viral YouTube video in them} after all, during the holidays people tend to get a bit tired of persimmon & pecan pie recipes! This recipe is FABULOUS! You literally cannot go wrong with it! For an added fact top it with any raw ingredients that is red in color then you really got the Christmas colors going!

Serves: 12 and can be made into a pie as seen above or individual tarts!

Ingredients Crust: 1 1/4 cups graham cracker crumbs (about 1 sleeve graham crackers) 1/4 cup (4Tbsp) coconut oil

Filling: 1 cup raw cashews, soaked for 4-6 hours (or overnight), then drained

3/4 cup full fat coconut milk, well shaken

1/4 cup coconut oil, melted 3-4 large limes or 6-7 key limes

(1 Tbsp zest, 1/2 cup juice)

1/3 – 1/2 cup coconut palm sugar or agave nectar (depending on preferred sweetness)

Instructions: Preheat oven to 375 degrees F and line a standard 10in baking dish or muffin tins with 12 paper liners. Don’t use foil as it is toxic!  Add graham crackers to a food processor and process until you achieve a fine meal. Then add melted coconut oil and pulse to combine. Distribute evenly among muffin tins or your baking dish and press down with a glass or spoon to flatten. Bake for 10 minutes or until golden. Remove and set aside to cool.

Add all filling ingredients to a blender and blend on high (or liquify) until creamy and smooth. Taste and adjust flavor as needed, adding more lime zest/juice for more tart, or more agave for added sweetness. Pour filling into muffin tins and tap on counter to release air. Top with a bit more lime zest and loosely cover. Freeze for 2-4 hours or until firm. Remove from the freezer for 10-15 minutes to thaw before serving.

This dish is EXCELLENT for the Holidays! It’s always a crowd pleaser!

Will keep covered in the freezer for up to 2 weeks, though best when fresh.

Notes: To keep this recipe RAW simply sub gluten free graham crackers for a walnut-date crust.

Post yoga raw vegan “cereal” with brazil nut “milk”!

Mmm! It’s 3am and I’m already up creating a delicious after yoga breakfast for my girlfriends and I! We are headed to a 5am hot yoga class! I get excited for yoga! I get even more excited over good organic raw vegan food! Wild local blueberries, fresh mint, “nannas” and golden mulberries! I’m topping this with Brazil nut “milk” infused with vanilla bean and cinnamon!

 

The recipe is simple!

1 Cup blueberries fresh or frozen

1 banana chopped 

4 mint leaves chopped

1/2 Cup golden mulberries 

dash of cinnamon 

 

For the “milk”

Take 1 Cup of Brazil nuts and blend them in a high power blender with three cups of water. Strain through a strainer or nut milk bag and add fresh vanilla bean!

 

Pour the Brazil nut milk over the chopped fruit and devour without shame or guilt!

Chewy raw vegan carob coconut fudge brownies! Just in case you still thought raw vegans were eating celery sticks:)

I had a craving last night for something chewy, sweet, yet incredibly healthy! I decided since it was late I didn’t want the “high” that raw chocolate gives to me. Here is what I came up with below:) I assure you that these SO hit the spot! Try topping with a dollop of raw vegan coconut “vice cream”!

 

Raw vegan carob coconut fudge brownies!

1 Cup gluten-free oatmeal

1 Cup carob chips

1/2 Cup coconut oil

1/3 Cup GRADE B Maple syrup (Grade B is less processed)

1/2 Cup shredded coconut

1/4 Cup soaked and sprouted pecans

Take the oatmeal, coconut oil, grade B maple syrup and shredded coconut and pulse in a food processor. Place mixture into a bowl and fold in the carob cups along with the pecans! Place the entire mixture into a baking dish and place into the fridge or freezer until desired brownie texture is reached! INDULGE without guilt or shame knowing you are eating a healthy sweet treat FULL of minerals due to the Grade b maple syrup!

Raw vegan chocolate brownies


 These are to die for! They are gluten free, dairy free and take less than 10 minutes to make! This recipe came about once I discovered my beloved expresso brownie at my favorite organic grocery contained canola oil:( Sigh 
I promise you these will be the most decadent moist, divine brownie you will ever eat! They are packed with a unique chocolate espresso flavor! Hey…You ready?! Did I mention they don’t cause cellulite?!
 
Serves: ~ 10-20 people or one VERY hungry girl who is in her pre menstrual phase or pregnant:) Just kidding!
INGREDIENTS
  • 1 cups raw walnuts, divided
  • 1/3 Cup chopped walnuts
  • 
2 – 2 1/2 cups Medjool or Deglet Nour dates, pitted
  • 3/4 cup cocoa powder 
  • 1-2 TB espresso powder or finely ground ORGANIC coffee (depending on preference)
  • pinch sea salt
  • a pinch of cinnamon 
  • a tiny piece of vanilla bean or 1/4 tsp vanilla extract (optional)
  • 1/2 cup vegan chocolate chips
 
INSTRUCTIONS
  1. First, sprout your nuts by soaking them over night then draining the soak water in the morning! Then, place 1 cup walnuts in the food processor and process until finely ground.
  2. Add the cocoa powder, espresso powder and sea salt. Pulse to combine and then transfer to bowl and set aside.
  3. PIT YOUR DATES! Then, add the dates to the food processor and process until small bits remain. Remove from bowl and set aside.
  4. Add nut and cocoa mixture back into food processor and while processing, drop small handfuls of the date pieces down into the food processor spout. Process until a dough consistency is achieved, adding more dates if the mixture does not hold together when squeezed in your hand. Fold in the chocolate chips!
  5. Add the brownie mixture to a small cake pan or loaf pan (I like to lightly dust my pan with coconut sugar first to avoid sticking)! Then add remaining 1/3 cup of chopped walnuts. Toss to combine and evenly distribute, and then press down with you hands until it is flat and firm.
  6. Place in freezer or fridge to chill before cutting. Store in an airtight container to keep fresh. Will keep in the fridge for at least 2 1/2 weeks and in the freezer for at least 2 months.
