Raw vegan chocolate brownies

Raw vegan chocolate brownies


 These are to die for! They are gluten free, dairy free and take less than 10 minutes to make! This recipe came about once I discovered my beloved expresso brownie at my favorite organic grocery contained canola oil:( Sigh 
I promise you these will be the most decadent moist, divine brownie you will ever eat! They are packed with a unique chocolate espresso flavor! Hey…You ready?! Did I mention they don’t cause cellulite?!
 
Serves: ~ 10-20 people or one VERY hungry girl who is in her pre menstrual phase or pregnant:) Just kidding!
INGREDIENTS
  • 1 cups raw walnuts, divided
  • 1/3 Cup chopped walnuts
  • 
2 – 2 1/2 cups Medjool or Deglet Nour dates, pitted
  • 3/4 cup cocoa powder 
  • 1-2 TB espresso powder or finely ground ORGANIC coffee (depending on preference)
  • pinch sea salt
  • a pinch of cinnamon 
  • a tiny piece of vanilla bean or 1/4 tsp vanilla extract (optional)
  • 1/2 cup vegan chocolate chips
 
INSTRUCTIONS
  1. First, sprout your nuts by soaking them over night then draining the soak water in the morning! Then, place 1 cup walnuts in the food processor and process until finely ground.
  2. Add the cocoa powder, espresso powder and sea salt. Pulse to combine and then transfer to bowl and set aside.
  3. PIT YOUR DATES! Then, add the dates to the food processor and process until small bits remain. Remove from bowl and set aside.
  4. Add nut and cocoa mixture back into food processor and while processing, drop small handfuls of the date pieces down into the food processor spout. Process until a dough consistency is achieved, adding more dates if the mixture does not hold together when squeezed in your hand. Fold in the chocolate chips!
  5. Add the brownie mixture to a small cake pan or loaf pan (I like to lightly dust my pan with coconut sugar first to avoid sticking)! Then add remaining 1/3 cup of chopped walnuts. Toss to combine and evenly distribute, and then press down with you hands until it is flat and firm.
  6. Place in freezer or fridge to chill before cutting. Store in an airtight container to keep fresh. Will keep in the fridge for at least 2 1/2 weeks and in the freezer for at least 2 months.

Today I was asked to write an article for the top chiropractic magazine in the Country! Flattered by the opportunity and standing knee deep in a sea of moving boxes I thought “no sweat”! 
 
You see, it’s easy for me to share my passion with all of you on the benefits of a living foods lifestyle! Why? because I know it works! 
 
I’ve watched my clients transform their bodies, minds and entire lives after switching over to my lifestyle plan.  The benefits of adopting a plant based raw food way of life are boundless. 
 
Raw foods are easy to digest, and they provide the maximum amount of energy with minimal bodily effort. Studies have shown us that living foods have healing powers that can alleviate many illnesses such as low energy, allergies, digestive disorders, weak immune system, high cholesterol, foggy thinking, obesity and weight problems (weight normalization), etc.. 
 
Research and real life experiences have also shown that a person can prevent the body’s healthy cells from turning into malignant cancerous cells by consuming mostly a raw food diet that includes whole organic food. Lets not for get the enzyme factor people! 
 
Almost every regulatory system in our body depends on enzymes and suffers by their depletion: coagulation, inflammation, wound healing, and tissue regeneration, to name just a few. The enzymes throughout the body is replenished by the amount of live foods we eat as the enzymes are absorbed into the blood to reestablish 
normal blood-serum enzyme levels.  
 
It’s your choice, If you want to live longer, be less susceptible to illness, have amazing bountiful energy, become younger….
 
ADOPT A LIVE FOOD PLANT BASED WAY OF LIFE! 
 
I say way of life in place of the word “diet” because lets face it, when I say “raw vegan diet” people think carrot and celery sticks when in reality a raw vegan diet can be as simple as incorporating a green vegetable juice into your aily routine or as elaborate as eating raw cookies, pizzas etc! 
 
Thats right! You can eat cookies, pizza even ice-cream during your transition on my program! 
 
Healthier versions of these products made from nuts seeds, coconut even raw chocolate may be enjoyed! All while you cleanse and detoxify the body! 
 
Don’t get me wrong, over time you will learn that eating these dense raw foods may not make you feel the best. It’s always better to opt for a cooked real version of a favorite food then a nutty dehydrated vegan one. 
 
The majority of my clients do something that I call “raw till dinner”! They eat an abundance of  live foods throughout the day and have their cooked foods and animal protein (from grass fed sources) in the evening. This leaves them feeling satisfied while still enjoying the benefits of live foods! 
 
When I started my journey 8 years ago I was fed up! I wanted to find a way to feel great and look great without compromising my love of sweet treats and savory dishes. 
 
Being a fitness model for several years, my body was so very ill from a high protein cooked diet that I honestly saw no light at the end of the tunnel. 
 
Enter Raw Food! 
 
I can honestly say that I feel better today than I did when i was in my twenties, I am told daily that I look better as well. I love taking my clients who feel the same way I did several years ago along the same path as I did. 
 
Seeing the joy in their eyes when they succeed on a more life giving, satisfying, beautiful way of eating brings me joy:)
